Spicy Grilled Corn

Indian-style grilled corn, known as ‘Bhutta,’ is a delicious and flavorful treat. Just thinking about it brings back many memories filled with pure joy and happiness. This perfectly chard corn rubbed with the simple spice mix and squeeze of lime juice reminds me of the last few days that I spend in India before I moved to the United States. Mumbai is well-known for its beaches and street food. One of them is spicy grilled corn. It is the most famous street food that you will find during monsoon (rainy season).
Bhutta is one of the well-known chat-patta food. Indulge in the tantalizing taste of Indian-style grilled corn, or Bhutta, a savory delight that captures the essence of street food in India. Fresh corn on the cob is carefully grilled to perfection, imparting a smoky aroma and a delightful char. The golden kernels are generously brushed with butter, adding a rich and luscious touch.

But it’s the burst of flavors that truly sets this snack apart. Red chili powder provides a subtle kick, while chaat masala contributes a unique blend of tanginess and spice. A pinch of salt enhances the overall taste, creating a symphony of flavors that dance on your taste buds. The final touch involves a squeeze of fresh lime juice, infusing the grilled corn with a zesty and refreshing twist.
This recipe is inspired by all the different type of corn’s that I had growing up, by the beaches in India. Barbecue, Summertime, Outdoor party, Indoor party you name it. Grilled corn is an easy snack that anyone can make in 5 minutes. You can do this on your grill or in open flame on your stove-top.

This Spicy Roasted Corn will make an excellent side dish for any occasions. You must have heard about Mexican-style grilled corn or Italian-style grilled corn, but have you heard of Indian-style grilled corn? Today I am going to show you how easy it is to make India-style spicy grilled corn.
Make sure to pick some fresh corn with husk on from your grocery store. Corn with the husk on is fresher than the one without. You can roast corn with or without husk on. I prefer without, it makes the grilling process faster. Peel off all the husks and silky hairs. I would keep the stalk attached, it makes it easier to hold the corn. Roast the corn until you hear kernels crackled and getting nice black chard on all the sides. Slather the corn with fresh lime and simple spice mix.

Spicy Grilled Corn
Ingredients
- 2 ears of Corn with husks on
- 1 Fresh Lime
- 1 tbsp Paprika powder
- 1 tsp. Salt (adjust per your taste)
- 1 tsp. Chaat masala
- Cilantro, finely chopped
Instructions
- Peel off the husks and silky hair from the corn.

- Place the corn on the grill or in the open flame on your stove-top.

- Roast the corn on medium heat from all the sides until each and every kernel is perfectly chard. This should take at least 5-10 minutes.

- Brush the roasted corn using the lime wedge dipped in the salt, chaat masala and paprika spice mix. Squeeze the lime every time you brush. Serve the Spicy grilled corn as a side-dish or appetizer.

Notes
- Use fresh Corn with the husks on.
- Feel free to play around with the spice mix. Add cumin powder for more flavors.
- Be careful while using the stovetop for roasting.
